Ingredients

  • 2 pounds Pork bones
  • 10 cups Water
  • 2 tablespoons Apple cider vinegar
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 Garlic cloves, smashed
  • 1 Onion, large, chopped
  • 3 Celery stalks, chopped
  • 1 cup Radishes, quartered
  • 1 inch Ginger, fresh, sliced
  • 2 tablespoons Coconut oil
  • 2 Bay leaves
  • 0.25 cup Fresh parsley, chopped
  • 0.5 Lemon, juiced
  • 2 cups Fresh spinach

Directions

Step 1

In a large stockpot, heat the coconut oil over medium-high heat.

Step 2

Add the pork bones to the pot and brown them on all sides, about 5-7 minutes.

Step 3

Add chopped onion, garlic, ginger, and celery to the pot. Sauté for another 5 minutes until fragrant.

Step 4

Pour in water and apple cider vinegar. Stir in the salt, black pepper, and bay leaves.

Step 5

Bring the mixture to a boil, then reduce heat to low and let it simmer.

Step 6

Cover and simmer for at least 2 hours, occasionally skimming off any impurities that rise to the top.

Add the radishes and continue to simmer for another 1 hour until they are tender and the flavor has fully developed.

Remove the pork bones from the soup and discard them.
