  • 1 14-ounce can diced tomatoes, canned
  • 2 cups chicken broth, low sodium
  • 2 tablespoons tomato paste
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons cilantro or parsley, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken thighs and cook until browned, about 5-7 minutes. Remove the chicken from the pot and set aside.

Step 2
