  • 2 celery stalks, diced
  • 1 small carrots, diced
  • 1 medium zucchini, diced
  • 200 grams cauliflower, chopped into florets
  • 1500 milliliters beef or chicken stock
  • 1 bay leaf
  • 1 teaspoon fresh thyme
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat the olive oil and butter in a large soup pot over medium-high heat.

Step 2

Add the bone-in mutton pieces and brown them on all sides to enhance the flavor, approximately 5-7 minutes.

Remove the mutton from the pot and set aside.
