  • 1 teaspoon ground coriander
  • 0.5 teaspoon cayenne pepper
  • 1 can (13.5 oz) canned coconut milk
  • 1 cup beef broth
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped
  • 1 medium lemon (juiced)
  • 1 cup cauliflower florets (optional, for serving)

Directions

Step 1

Heat 1 tablespoon of coconut oil in a large pot over medium-high heat. Add the beef cubes and brown them on all sides. Work in batches if necessary to avoid overcrowding the pot. Remove the beef and set aside.

Step 2

In the same pot, add the remaining tablespoon of coconut oil. Add chopped onions and sauté until they begin to soften, about 5 minutes.
