  • 1 pound beef chuck, cut into 1-inch cubes

  • 0.5 teaspoon black pepper, freshly ground
  • 1 whole small onion, diced
  • 3 whole garlic cloves, minced
  • 2 whole celery stalks, chopped
  • 1 whole medium zucchini, diced
  • 1 whole green bell pepper, diced
  • 2 cups kale leaves, chopped with stems removed
  • 5 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 whole bay leaf

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat.

Step 2

Season the beef cubes with salt and pepper.

Step 3

Add the beef cubes to the pot and sear until browned on all sides, about 5-7 minutes.

Remove the beef from the pot and set aside.
