Ingredients

  • 500 grams Beef liver
  • 2 tablespoons Ghee or coconut oil
  • 1 medium Onion
  • 3 units Garlic cloves
  • 1 teaspoon Salt
  • 1 teaspoon Paprika
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Cumin
  • 1 unit Bay leaf
  • 2 tablespoons Tomato paste
  • 2 cups Beef broth
  • 2 units Celery stalks
  • 1 medium Zucchini
  • 1 large Red bell pepper
  • 0.25 cup Fresh parsley

Directions

Step 1

Start by preparing the beef liver. Rinse it under cold water and pat dry with paper towels. Slice the liver into bite-sized pieces.

Step 2

In a large pot, heat ghee or coconut oil over medium-high heat. Once the oil is shimmering, add the sliced liver pieces. Sauté them for about 3 minutes until browned on all sides. Remove the liver from the pot and set aside.

Reduce the heat to medium and add the chopped onion to the same pot. Sauté for 4-5 minutes until the onion is translucent.

Mince the garlic cloves and add them to the pot. Cook for another minute until fragrant.
