  • 1 pound lamb shoulder, boneless
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 stalks celery stalks, diced
  • 1 medium carrot, diced
  • 1 medium zucchini, diced
  • 14.5 ounces canned tomatoes, chopped
  • 4 cups beef broth
  • 1 teaspoon rosemary, dried
  • 1 teaspoon thyme, dried
  • 1 leaf bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper, cracked
  • 2 cups spinach, fresh

Directions

Step 1

Cut the lamb shoulder into bite-sized pieces, removing excess fat as needed.

Step 2

In a large pot, heat the olive oil over medium-high heat.

Step 3

Add the lamb pieces to the pot and brown them on all sides, about 5-7 minutes.

Step 4

Remove the lamb from the pot and set aside.

In the same pot, add the chopped onion, garlic, celery, and carrot. Sauté until the vegetables are softened, about 5 minutes.
