  • 2 pounds lamb shoulder
  • 3 tablespoons olive oil

  • 1 cup canned crushed tomatoes
  • 1 cup coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric powder
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh cilantro

Directions

Step 1

Cut the lamb shoulder into 1-inch cubes and set aside.

Step 2

Finely chop the onion, mince the garlic, and grate the ginger.

Step 3

Heat 2 tablespoons of olive oil in a large pot over medium-high heat. Add the lamb cubes and brown them on all sides. This should take about 5-7 minutes. Remove the lamb from the pot and set aside.
