Ingredients

  • 2 pounds beef bones (marrow, knuckle, or mixed)
  • 5 garlic cloves, peeled
  • 1 medium onion, quartered
  • 2 large carrots, chopped
  • 2 celery stalks, chopped
  • 2 bay leaves
  • 1 teaspoon peppercorns
  • 2 tablespoons apple cider vinegar
  • 4 quarts water
  • 0 salt, to taste

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Spread the beef bones on a large baking sheet and roast in the preheated oven for 30-40 minutes, turning halfway through, until golden brown.

Step 3

Transfer the roasted bones to a large stockpot. Add garlic cloves, onion, carrots, celery, bay leaves, and peppercorns.

Pour in the apple cider vinegar and enough cold water to cover the bones and vegetables completely (about 4 quarts).

Bring the mixture to a vigorous boil over high heat.
