  • 1 medium Red Bell Pepper, chopped
  • 1 medium Zucchini, chopped
  • 1 cup Cauliflower, riced
  • 14 ounces Tomatoes, canned and crushed
  • 4 cups Vegetable Broth
  • 1 cup Chickpeas, canned and drained
  • 2 cups Spinach, fresh
  • 1 teaspoon Cumin, ground
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Directions

Step 1

In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
