Ingredients

  • 2 tablespoons olive oil
  • 2 pieces chicken breasts, boneless and skinless

  • 0.5 teaspoons black pepper
  • 1 cup celery, chopped
  • 1 piece carrot, small, chopped
  • 1 cup zucchini, diced
  • 1 cup bell pepper, chopped
  • 3 pieces garlic cloves, minced
  • 6 cups chicken broth
  • 2 cups baby spinach
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Season the chicken breasts with salt and pepper, then add them to the pot. Cook until browned on both sides, about 6-8 minutes total. Remove from pot and set aside.

In the same pot, add celery, carrot, zucchini, bell pepper, and garlic. Sauté for 5 minutes, until vegetables are just tender.

Add the chicken broth to the pot, bringing it to a simmer.
