Ingredients

  • 1.5 pounds Chicken thighs, boneless and skinless
  • 2 tablespoons Olive oil
  • 1 medium Onion, chopped
  • 4 cloves Garlic, minced
  • 2 stalks Celery, chopped
  • 2 medium Carrots, chopped
  • 1 medium Zucchini, diced
  • 2 cups Cauliflower florets
  • 4 cups Chicken broth
  • 1 can (14.5 ounces) Diced tomatoes, canned
  • 1 Bay leaf
  • 1 teaspoon Dried thyme
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Cut the chicken thighs into bite-sized pieces.

Step 2

In a large pot or Dutch oven, heat the olive oil over medium-high heat.

Add the chicken pieces to the pot and sear until browned on all sides, about 5-7 minutes. Remove the chicken and set aside.
