Ingredients

  • 1 pound boneless, skinless chicken thighs

  • 1 medium onion, diced
  • 3 celery stalks, chopped
  • 1 medium bell pepper, diced
  • 1 medium Zucchini, sliced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 6 cups chicken broth
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon dried oregano
  • 2 cups baby spinach leaves
  • 0.25 cup fresh parsley, chopped
  • 0.5 lemon, juiced

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Season chicken thighs with salt and pepper.

Add the chicken to the pot and cook until browned on both sides, about 5 minutes per side. Remove and set aside.
