Ingredients

  • 10 pieces large eggs
  • 0.5 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 8 slices bacon, cooked and crumbled
  • 1 pound sausage, ground
  • 2 cups spinach, fresh
  • 1 large piece red bell pepper, diced
  • 0.5 cup onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with olive oil or non-stick cooking spray.

Step 2

In a large skillet over medium heat, add olive oil then sauté the onion, garlic, and bell pepper until they are soft, about 5 minutes.

Step 3

Add the ground sausage to the skillet, breaking it up with a spatula as it cooks. Continue cooking until the sausage is browned and cooked through, about 7-10 minutes. Drain excess fat if necessary.

Step 4

Add the fresh spinach to the skillet and stir until wilted, about 2 minutes. Remove from heat.

In a large bowl, whisk together the eggs and heavy cream until well combined. Season with salt and black pepper.

Add the cooked sausage mixture, crumbled bacon, and 3/4 cup of the shredded cheddar cheese to the egg mixture. Stir to combine.
