Ingredients

  • 2 pounds beef stew meat
  • 3 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic cloves, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 leaves bay leaves
  • 1 teaspoon dried thyme
  • 1 medium carrot, sliced
  • 2 stalks celery stalks, chopped
  • 1 large rutabaga, peeled and cubed
  • 8 ounces mushrooms, sliced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium-high heat.

Step 2

Add the beef stew meat and sear on all sides until brown. Remove the meat and set it aside.

Step 3

In the same pot, add the chopped onions and sauté until they are translucent, about 5 minutes.

Add the minced garlic and cook for another 1 minute until fragrant.

Pour in the beef broth and stir in the tomato paste until well combined.
