  • 1 tablespoon worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon fresh thyme
  • 2 medium carrots, diced
  • 2 celery stalks, sliced
  • 8 ounces cremini mushrooms, quartered
  • 1 medium zucchini, chopped

Directions

Step 1

Cut the beef chuck roast into 1-inch cubes and season with salt and pepper.

Step 2

In a large Dutch oven over medium-high heat, add 1 tablespoon of olive oil.

Once the oil is hot, add the beef in batches. Sear each batch for 3-4 minutes, turning to brown all sides. Do not overcrowd the pot.
