  • 2 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 4 garlic cloves, minced
  • 1 medium onion, diced
  • 3 celery stalks, chopped
  • 2 medium carrots, chopped
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 2 zucchini, diced
  • 8 ounces mushrooms, sliced
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Cut the beef chuck roast into 1-inch cubes, removing any excess fat.

Step 2

In a large pot, heat the olive oil over medium-high heat. Season the beef cubes with salt and black pepper, then add them to the pot. Brown the beef on all sides, working in batches if necessary, then remove and set aside.

In the same pot, add the minced garlic and diced onion. Sauté for 4-5 minutes until the onion becomes translucent.
