Ingredients

  • 2 pounds beef short ribs
  • 2 tablespoons olive oil
  • 1 medium, chopped onion

  • 3 chopped celery stalks
  • 1 medium, peeled and cubed rutabaga
  • 2 medium, peeled and sliced carrots
  • 8 cups beef broth
  • 2 bay leaves
  • 1 tablespoon, chopped fresh thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat.

Step 2

Season the beef short ribs with salt and pepper, then add them to the pot. Brown the ribs on all sides, about 8-10 minutes.

Remove the ribs from the pot and set aside.

In the same pot, add the chopped onion and cook for 3-4 minutes until softened.
