Ingredients

  • 1 lb beef chuck roast
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 6 cups beef broth
  • 2 celery stalks, sliced
  • 1 medium carrot, diced
  • 2 medium zucchini, spiralized into noodles
  • 2 bay leaves
  • 1 tsp thyme, dried
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Directions

Step 1

Cut the beef chuck roast into bite-sized pieces. Season with salt and black pepper.

Step 2

Heat the olive oil in a large pot over medium-high heat. Add the beef and sear on all sides until browned, about 5 minutes.

Step 3

Remove the beef from the pot and set it aside.

Step 4

In the same pot, add the diced onion and minced garlic. Sauté until the onion is translucent, about 3 minutes.

Step 5

Pour in the beef broth, and use a wooden spoon to scrape up any brown bits from the bottom of the pot.

Step 6

Add the sliced celery, diced carrot, bay leaves, and thyme. Return the beef to the pot.

Step 7

Reduce the heat to low and cover the pot. Let the soup simmer for 75 minutes, or until the beef is tender.

Step 8

Once the beef is tender, add the spiralized zucchini noodles to the pot. Stir and cook for an additional 3-5 minutes, until the noodles are just tender.

Step 9

Taste the soup and season with additional salt and pepper if necessary.

Step 10

Remove the bay leaves and discard.

Step 11

Ladle the soup into bowls and garnish with chopped fresh parsley before serving.
