Ingredients

  • 1 pound Ground beef
  • 2 tablespoons Olive oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 medium Green bell pepper, chopped
  • 1 medium Red bell pepper, chopped
  • 14 ounces Canned diced tomatoes (no sugar added)
  • 2 tablespoons Tomato paste
  • 1 cup Beef broth
  • 2 tablespoons Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Cayenne pepper (optional)
  • 1 medium Zucchini, diced

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent, about 3-4 minutes.

Step 2

Add the ground beef to the pot, breaking it apart with a wooden spoon. Cook until the beef is browned and no longer pink, approximately 5-7 minutes. Drain excess fat, if necessary.

Step 3

Stir in the chopped green and red bell peppers, and cook for another 3-4 minutes until they begin to soften.

Step 4

Add the canned diced tomatoes, tomato paste, and beef broth to the pot. Stir well to combine.

Step 5

Stir in the chili powder, cumin, paprika, oregano, salt, black pepper, and cayenne pepper. Mix everything thoroughly.

Step 6

Bring the mixture to a boil, then reduce the heat to low. Let the chili simmer uncovered for about 20 minutes to allow the flavors to meld.

Step 7

Stir in the diced zucchini, and continue to simmer for an additional 10 minutes or until the zucchini is tender.
