  • 1 pound Beef chuck, diced into 1-inch cubes

  • 2 Celery stalks, chopped
  • 1 medium Carrot, chopped
  • 3 Garlic cloves, minced
  • 6 cups Beef broth, low sodium
  • 14.5 ounces Diced tomatoes, canned
  • 2 cups Cauliflower rice
  • 2 Bay leaves
  • 1 teaspoon Thyme leaves, dried
  • 1 teaspoon Oregano, dried
  • 2 cups Spinach, fresh

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat. Season the beef cubes with salt and pepper.

Step 2

Add the beef to the pot and brown on all sides, about 5-7 minutes. Remove the beef and set it aside.
