Ingredients

  • 2 tablespoons olive oil
  • 1 pound beef stew meat, cubed
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 2 celery stalks, sliced
  • 1 medium carrot, chopped
  • 1 medium zucchini, chopped
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 2 tablespoons tomato paste
  • 6 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large soup pot over medium-high heat.

Step 2

Season the cubed beef stew meat with salt and black pepper.

Step 3

Add the beef to the pot and brown it on all sides, about 5-7 minutes. Remove beef from the pot and set aside.

Step 4

In the same pot, add the chopped onion, and sauté for about 3 minutes until translucent.

Step 5

Stir in the minced garlic, sliced celery, and chopped carrot, and sauté for another 2 minutes.

Step 6

Return the beef to the pot, adding the chopped zucchini, green beans, and tomato paste. Stir well to combine.

Step 7

Pour in the beef broth, ensuring the ingredients are submerged. Mix in the dried thyme, dried oregano, and bay leaf.

Step 8

Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 1 to 1.5 hours, until the beef is tender.

Step 9

Remove the bay leaf, taste, and adjust seasoning if necessary.

Step 10

Ladle the soup into bowls and garnish with fresh parsley before serving.
