Ingredients

  • 2 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 medium yellow onion
  • 4 garlic cloves
  • 4 cups beef broth
  • 1 medium butternut squash
  • 3 celery stalks
  • 1 teaspoon fresh thyme
  • 2 bay leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon xanthan gum

Directions

Step 1

Cut the beef chuck roast into 1-inch cubes and season with salt and pepper.

Step 2

In a large pot or Dutch oven, heat olive oil over medium-high heat.

Step 3

Add the beef cubes in batches, searing each side until browned. Remove the beef from the pot and set aside.

Step 4

Chop the onion and mince the garlic cloves.

Step 5

In the same pot, add the onion and garlic, sautéing until the onion is translucent.

Step 6

Add the beef broth to the pot, scraping any browned bits from the bottom.

Step 7

Return the beef to the pot.

Step 8

Peel and cut the butternut squash into bite-sized cubes.

Step 9

Chop the celery stalks into small pieces.

Step 10

Add the squash, celery, thyme, and bay leaves to the pot. Stir to combine.

Step 11

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1.5 to 2 hours, or until the beef is tender.

Step 12

Remove the bay leaves from the stew.

Step 13

In a small bowl, mix the xanthan gum with a little water to create a slurry.

Step 14

Slowly add the slurry to the stew, stirring constantly, until the stew thickens slightly.

Step 15

Adjust seasoning with more salt and pepper if needed.

Step 16

Serve hot, garnishing with additional thyme if desired.
