  • 2 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 large onion

  • 2 celery stalks
  • 4 cups beef broth
  • 1 14.5-ounce can canned diced tomatoes
  • 1 pound green beans
  • 1 tablespoon Worcestershire sauce
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Cut the beef chuck roast into 1-inch cubes. Season with salt and pepper.

Step 2

Heat olive oil in a large Dutch oven or soup pot over medium-high heat.

Add the beef cubes in batches, avoiding overcrowding, and brown them on all sides. Remove each batch and set aside.
