Ingredients

  • 1 pound ground beef
  • 2 tablespoons olive oil
  • 1 medium, chopped onion
  • 1 medium, chopped bell pepper
  • 3 minced garlic cloves
  • 15 oz canned diced tomatoes
  • 15 oz, drained and rinsed canned black soybeans
  • 2 cups beef broth
  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon, optional cayenne pepper
  • 1 medium, juiced lime
  • 0.5 cup, chopped fresh cilantro

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Step 2

Add the chopped onion and bell pepper. Sauté for 5 minutes or until onions become translucent.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the ground beef to the pot. Cook, breaking up the meat with a wooden spoon, until it is browned and cooked through, about 6-8 minutes.

Step 5

Stir in the chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne pepper (if using). Cook for 1 minute to let the spices bloom.

Step 6

Pour in the canned diced tomatoes and beef broth. Stir to combine.

Step 7

Add the drained and rinsed black soybeans to the pot.

Step 8

Bring the chili to a simmer. Reduce the heat to low, cover the pot, and let it cook for 25-30 minutes, stirring occasionally.

Step 9

Remove the lid and stir in the lime juice and fresh cilantro.

Step 10

Taste and adjust seasonings if necessary. Serve hot, garnished with additional cilantro if desired.
