  • 1 whole Onion (medium, diced)
  • 3 whole Garlic cloves (minced)
  • 1 medium Red bell pepper (diced)
  • 1 medium Zucchini (diced)
  • 2 whole Celery stalks (sliced)
  • 2 tablespoons Tomato paste
  • 2 cups Vegetable broth
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 cups Spinach leaves
  • 0.25 cup Parmesan cheese (grated, optional for garnish)

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add diced onion and cook for about 3-4 minutes until translucent.

Stir in minced garlic and cook for another minute until fragrant.
