Ingredients

  • 6 sheets Nori sheets
  • 300 grams Cauliflower rice
  • 2 tablespoons Rice vinegar
  • 100 grams Cream cheese
  • 200 grams Fresh salmon
  • 1 small Cucumber
  • 1 small Avocado
  • 2 tablespoons Soy sauce
  • 1 teaspoon Wasabi
  • 20 grams Pickled ginger

Directions

Step 1

1. Begin by preparing the cauliflower rice. If using whole cauliflower, grate or pulse florets in a food processor until rice-sized. Microwave the cauliflower rice for 4 minutes, stirring halfway through, until tender.

2. Once cooked, drain the cauliflower rice in a clean kitchen towel or cheesecloth to remove excess moisture. Transfer it to a mixing bowl and let it cool slightly.

3. Stir in the rice vinegar and cream cheese into the cooled cauliflower rice until evenly mixed. Set aside.

4. Thinly slice the fresh salmon into long strips. Peel and cut the cucumber and avocado into similarly sized strips.

5. Lay one nori sheet horizontally with the shiny side down. Place 2-3 tablespoons of the cauliflower rice mixture at the left third of the sheet.

7. To roll the temaki, fold the bottom left corner of the nori sheet over the filling and roll into a cone shape. Use a bit of water to seal the edge of the nori.
