Ingredients

  • 1 medium head Cauliflower
  • 2 tablespoons Rice vinegar
  • 1 teaspoon Swerve (or preferred keto-friendly sweetener)
  • 0.5 teaspoon Salt
  • 8 slices Fresh Hamachi (Yellowtail)
  • 1 small Nori sheets
  • 1 teaspoon Wasabi
  • 2 tablespoons Soy sauce (or tamari for gluten-free)
  • 2 tablespoons Pickled ginger (optional)

Directions

Step 1

Remove the leaves and the core from the cauliflower. Chop it into small florets.

Step 2

Using a food processor, pulse the cauliflower florets until they resemble small grains of rice.

Step 3

Transfer the cauliflower rice to a microwave-safe bowl and cover with a microwave-safe lid or plastic wrap. Microwave for about 4-5 minutes until tender.

Allow the cauliflower to cool slightly, then place it in a clean kitchen towel and squeeze out as much excess moisture as possible.

In a mixing bowl, combine the cauliflower rice with the rice vinegar, Swerve, and salt. Mix well to combine and let the flavors meld for a few minutes.
