  • 1.5 cups Almond flour
  • 0.25 cups Coconut flour
  • 1 teaspoon Xanthan gum
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 0.5 cups Cold unsalted butter (cubed)
  • 2 large Egg
  • 1 teaspoon Apple cider vinegar
  • 2 tablespoons Cold water
  • 1 cup Diced ham
  • 1 cup Shredded cheddar cheese
  • 1 clove Crushed garlic
  • 2 tablespoons Fresh chives (chopped)
  • 1 large Egg for wash
  • 1 tablespoon Water for egg wash

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Step 2

In a food processor, combine almond flour, coconut flour, xanthan gum, baking powder, and salt. Pulse until mixed.

Step 3

Add the cold, cubed butter to the processor and pulse until the mixture resembles coarse crumbs.

Step 4

Add 2 eggs, apple cider vinegar, and cold water. Pulse until the dough begins to clump together.

Step 5

Transfer the dough to a sheet of plastic wrap. Form into a disc, wrap tightly, and refrigerate for at least 15 minutes.

In a bowl, combine the diced ham, shredded cheese, crushed garlic, and chopped chives. Mix well.

Lightly flour a clean surface with almond flour and roll out the chilled dough to about 1/8-inch thick.
