  • 0.5 cup Almond flour
  • 2 oz Cream cheese
  • 4 large Eggs
  • 1 tablespoon Heavy cream
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Butter
  • 4 oz Sliced deli ham
  • 1 cup Grated cheddar cheese
  • 1 tablespoon Chives (optional, for garnish)

Directions

Step 1

In a large mixing bowl, combine the almond flour, cream cheese, eggs, heavy cream, salt, and black pepper. Use a blender or an immersion blender to mix until a smooth batter forms.

Step 2

Heat a non-stick skillet over medium heat and add 1/2 tablespoon of butter. Once melted, pour in about 1/4 cup of the crepe batter, swirling the skillet to spread the batter thinly and evenly.

Step 3

Cook for 2-3 minutes until the edges begin to set and the bottom is golden brown. Gently flip the crepe using a spatula and cook the other side for an additional 1-2 minutes.

Step 4

Remove the crepe from the skillet and set it aside. Repeat the process with the remaining batter, adding more butter as needed. You should have approximately 4-5 crepes.

Step 5

Return one cooked crepe to the skillet. Lay 1 oz of sliced ham and sprinkle 1/4 cup of grated cheddar cheese over half of the crepe.

Fold the other half over the filling and cook for another 1-2 minutes, or until the cheese has melted.

Step 7

Transfer the filled crepe to a plate and repeat with the remaining crepes and fillings.
