Ingredients

  • 4 medium Zucchini
  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 1 inch piece Ginger, minced
  • 1 medium Bell pepper, thinly sliced
  • 1 Carrot, julienned
  • 1 cup Cabbage, shredded
  • 3 Green onions, chopped
  • 2 tablespoons Soy sauce
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Sriracha
  • 1 teaspoon Sesame oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash the zucchinis and, using a spiralizer, create 'noodles' from them. Set them aside on a paper towel to drain any excess moisture.

Heat a large pan over medium-high heat and add olive oil.

Add minced garlic and ginger to the pan, sautéing for about 30 seconds until fragrant.

Add the sliced bell pepper, julienned carrot, and shredded cabbage to the pan. Sauté the vegetables for about 3-4 minutes until they start to soften.
