Ingredients

  • 1 3.5 to 4 pounds (1.6 to 1.8 kg) Whole chicken
  • 3 inches, peeled and sliced Fresh ginger
  • 6 Garlic cloves
  • 4 stalks Green onions
  • 2 tablespoons Salt
  • 12 cups Water
  • 4 cups Cauliflower rice
  • 1 cup Chicken broth
  • 2 tablespoons Sesame oil
  • 2 tablespoons Soy sauce (keto-friendly)
  • 1 large Cucumber
  • 0.5 bunch Fresh cilantro

Directions

Step 1

Rinse the whole chicken under cold water and pat it dry with paper towels.

Step 2

In a large pot, add the 12 cups of water, chicken, salt, 2 sliced green onion stalks, 3 garlic cloves, and ginger slices.

Step 3

Bring the mixture to a boil, then reduce heat to low and simmer uncovered for about 60 minutes until the chicken is cooked through.

Step 4

While the chicken is cooking, prepare the cauliflower rice. In a large pan over medium heat, add 1 tablespoon of sesame oil and the remaining 3 minced garlic cloves.

Stir in the cauliflower rice and cook for about 5 to 7 minutes, ensuring it's tender. Add the chicken broth, mix well, and allow it to evaporate until everything is combined and fluffy.
