  • 1 3-4 pounds Whole chicken
  • 2 tablespoons Sea salt
  • 4 stalks Green onions
  • 4 inches Ginger
  • 6 cloves Garlic
  • 1 head Cauliflower
  • 2 tablespoons Coconut oil
  • 2 tablespoons Soy sauce
  • 2 tablespoons Sesame oil
  • 0.5 cup Fresh cilantro
  • 1 whole Lime

Directions

Step 1

Begin by cleaning the chicken thoroughly under cold water. Pat dry with paper towels.

Step 2

Rub the chicken inside and out with the sea salt, ensuring even coverage.

Step 3

Slice 2 inches of the ginger and 2 cloves of garlic thinly. Stuff the cavity of the chicken with half of the green onions, 2 inches of ginger, and 2 cloves of garlic.

Step 4

Place the chicken in a large pot and cover it completely with water, approximately 10-12 cups. Bring to a boil over medium-high heat.

Step 5

Once boiling, reduce the heat to low and simmer gently for about 45-60 minutes, skimming off any foam or impurities that rise to the surface.

Meanwhile, cut the cauliflower into florets and use a food processor to pulse into rice-sized pieces.

In a large skillet, heat coconut oil over medium heat. Add the remaining minced garlic and sauté until fragrant.
