Ingredients

  • 1 about 3-4 pounds Whole chicken
  • 2 2-inch pieces Ginger
  • 4 stalks Green onions
  • 2 tablespoons Salt
  • 1 large head Cauliflower
  • 2 tablespoons Sesame oil
  • 2 tablespoons Soy sauce
  • 1 cup Fresh basil leaves
  • 5 cloves Garlic
  • 4 cups Chicken broth
  • 1 medium, sliced Cucumber

Directions

Step 1

Rinse the whole chicken thoroughly under cold running water. Pat it dry with paper towels.

Step 2

In a large stockpot, bring 8 cups of water to a boil. Add 1 tablespoon of salt, 1 piece of ginger, and 2 green onions (trimmed and tied in a knot).

Step 3

Once the water is boiling, gently lower the chicken into the pot, ensuring it is fully submerged. Reduce the heat to low and let it simmer for about 45 minutes, skimming off any foam that appears.

Step 4

Remove the chicken from the pot and immerse it immediately in an ice bath to stop the cooking. Keep the broth warm for later use.

Step 5

Once the chicken is cooled, rub sesame oil over its surface. Cut into serving pieces and set aside.

Chop the cauliflower into florets and pulse in a food processor until it resembles rice grains.

Heat 1 tablespoon of sesame oil in a large pan over medium heat. Add the remaining ginger (finely minced) and 3 cloves of garlic (minced), sauté until aromatic.

For the dipping sauce, finely chop the remaining garlic and green onions, and mix with soy sauce to taste.

Serve the chicken pieces over a bed of cauliflower rice, garnished with cucumber slices.

Serve with extra broth in bowls and the dipping sauce on the side.
