Ingredients

  • 1 large head cauliflower florets
  • 2 tablespoons olive oil
  • 1 medium, chopped onion
  • 3 minced garlic cloves
  • 1 pound ground beef
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon, dried thyme
  • 2 tablespoons, fresh chopped parsley
  • 3 tablespoons butter
  • 0.25 cup heavy cream
  • 1 cup, shredded cheddar cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Bring a large pot of salted water to a boil. Add cauliflower florets and cook until very tender, about 10 minutes. Drain well and set aside.

In a large skillet over medium heat, heat olive oil. Add onion and garlic and sauté until translucent, about 5 minutes.

Add the ground beef to the skillet and cook until browned, breaking it up with a spoon, about 8-10 minutes.
