Ingredients

  • 1 cup Almond flour
  • 0.5 cup Coconut flour
  • 0.5 cup Desiccated coconut
  • 0.5 cup Ghee
  • 0.5 cup Erythritol
  • 0.25 cup Heavy cream
  • 0.5 cup Chopped nuts (walnuts, almonds, or pecans)
  • 1 teaspoon Cardamom powder
  • 0.25 teaspoon Salt
  • 1 teaspoon Vanilla extract

Directions

Step 1

In a medium saucepan, melt the ghee over medium heat.

Step 2

Add almond flour and coconut flour to the pan and roast, stirring constantly, for about 5-7 minutes until the mixture becomes golden brown and fragrant.

Step 3

Mix in the desiccated coconut and continue to cook for another 3 minutes, allowing the flavors to blend well.

Step 4

Stir in the erythritol and heavy cream, mix thoroughly until the sweetener is completely dissolved.

Step 5

Add chopped nuts, cardamom powder, salt, and vanilla extract, and mix everything together.

Step 6

Cook the mixture on low heat for another 5-8 minutes, stirring frequently until it thickens and starts to pull away from the sides of the pan.

Prepare a square dish (8x8 inches) lined with parchment paper and spread the mixture evenly onto it.

Press down gently with a spatula to smooth out the top.

Allow the Gudpak to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours until it sets completely.
