Ingredients

  • 500 grams Chicken thighs
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 medium Onion
  • 3 pieces Garlic cloves
  • 1 teaspoon Ginger
  • 2 medium Tomatoes
  • 1 cup Natural peanut butter
  • 4 cups Chicken broth
  • 100 grams Spinach
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Red chili powder
  • 0.5 teaspoon Smoked paprika
  • 1 tablespoon Lime juice

Directions

Step 1

Preheat a large pot over medium heat and add olive oil.

Step 2

Season the chicken thighs with salt and black pepper. Add the chicken to the pot and brown on all sides, about 6-8 minutes. Remove the chicken and set aside.

Step 3

In the same pot, add chopped onion and sauté until translucent, approximately 4 minutes.

Step 4

Add minced garlic and grated ginger to the pot and cook for an additional 1 minute until fragrant.

Step 5

Chop the tomatoes and add to the pot, cooking until they begin to break down, about 3 minutes.

Stir in the red chili powder and smoked paprika, cooking for another minute.

Return the chicken thighs to the pot, pour in the chicken broth, and bring to a simmer.

Reduce the heat to low and cover. Let the soup simmer for about 20 minutes until the chicken is cooked through and tender.

Remove the chicken from the pot, shred it using two forks, and return the shredded chicken to the soup.
