Ingredients

  • 8 pieces boneless chicken thighs
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 units garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

In a large mixing bowl, combine the olive oil, lemon juice, minced garlic, smoked paprika, ground cumin, dried oregano, salt, and black pepper to create the marinade.

Step 2

Add the boneless chicken thighs to the marinade, ensuring each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 3 hours for more flavor.

Step 3

Preheat your grill to medium-high heat. If using a charcoal grill, wait until the coals are glowing red and covered with a fine gray ash.

Step 4

Remove the chicken thighs from the marinade, allowing any excess marinade to drip off.

Step 5

Place the chicken thighs on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken has a nice char.

Step 6

Once cooked, remove the chicken from the grill and let it rest for a few minutes to retain the juices.

Step 7

Sprinkle the chopped fresh parsley over the grilled chicken thighs before serving.

Step 8

Serve hot and enjoy your keto-friendly grilled pargiyot with a side of grilled vegetables or a fresh green salad.
