Ingredients

  • 0.25 cup fresh parsley, chopped
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, sliced
  • 1 red onion, cut into chunks
  • 10 wooden or metal skewers

Directions

Step 1

Cut the chicken thighs and lamb shoulder into 1.5-inch cubes and place them in a large bowl.

Step 2

In a separate bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, ground cumin, paprika, salt, black pepper, and chopped fresh parsley to make the marinade.
