Ingredients

  • 8 oz Halloumi cheese
  • 1 large Avocado
  • 1 medium Tomato
  • 0.5 medium Red onion
  • 1 head Butterhead lettuce
  • 2 tablespoons Extra virgin olive oil
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Lemon juice

Directions

Step 1

Slice the Halloumi cheese into four even slices.

Step 2

Heat a grill pan over medium-high heat and brush with 1 tablespoon of extra virgin olive oil.

Step 3

Grill the Halloumi slices for about 2-3 minutes on each side, until they are golden brown with grill marks. Remove from heat and set aside.

Cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Add the lemon juice, salt, and pepper, then mash with a fork until smooth.
