  • 4 pieces boneless, skinless chicken breasts

  • 2 medium zucchini, sliced
  • 3 medium bell peppers, assorted colors, sliced
  • 1 medium red onion, sliced
  • 1 cup cherry tomatoes
  • 0.25 cup fresh basil leaves, chopped

Directions

Step 1

In a large bowl, whisk together 2 tablespoons of olive oil, lemon juice, minced garlic, oregano, salt, and black pepper.

Step 2

Add the chicken breasts to the marinade, ensuring they are well coated. Allow them to marinate for at least 15 minutes, or up to 2 hours for deeper flavor, in the refrigerator.

Preheat your grill to medium-high heat.

While the grill is heating, toss the sliced zucchini, bell peppers, red onion, and cherry tomatoes with the remaining 2 tablespoons of olive oil, a pinch of salt, and pepper.
