  • 4 slices provolone cheese
  • 1 cup spinach
  • 1 small tomato
  • 0.25 cup mayonnaise

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Cut the cauliflower into florets and process in a food processor until the texture resembles rice.

Step 3

Transfer the cauliflower 'rice' to a microwave-safe bowl and microwave for 8 minutes or until tender.
