Ingredients

  • 4 pieces Cactus paddles (nopales)
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 whole Lime
  • 0.25 cup Fresh cilantro
  • 0.25 teaspoon Garlic powder

Directions

Step 1

Begin by cleaning the cactus paddles. Using a knife, carefully remove the thorns and the edges of the paddles. Rinse thoroughly to remove any sticky residue and pat them dry with a paper towel.

Step 2

In a small bowl, combine olive oil, salt, black pepper, and garlic powder. Mix until well combined.

Step 3

Brush both sides of the cleaned cactus paddles with the seasoned olive oil mixture.

Step 4

Preheat your grill to medium-high heat. Once heated, place the cactus paddles on the grill and close the lid.

Step 5

Grill the paddles for about 4-5 minutes on each side, until they are tender and have nice grill marks.

Step 6

While the cactus is grilling, finely chop the fresh cilantro and cut the lime into wedges.

Step 7

Once the cactus paddles are done, remove them from the grill and transfer to a serving platter.

Step 8

Squeeze fresh lime juice over the grilled cactus paddles and garnish with chopped cilantro.

Step 9

Serve immediately, enjoying this light, keto-friendly side dish that pairs beautifully with grilled meats or other protein sources.
