Ingredients

  • 2 fish whole branzino, cleaned and scaled
  • 4 tablespoons olive oil
  • 1 lemon lemon, thinly sliced
  • 4 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 3 cloves garlic, finely minced
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 lemon lemon wedges, for serving

Directions

Step 1

Preheat the grill to medium-high heat.

Step 2

Rinse the branzino fish inside and out under cold water and pat dry with paper towels.

Step 3

In a small bowl, combine olive oil, minced garlic, sea salt, and black pepper. Mix well.

Step 4

Using a brush or your hands, coat the inside and outside of each branzino with the garlic oil mixture.

Step 5

Stuff each fish with lemon slices, 2 sprigs of rosemary, and 2 sprigs of thyme.

Step 6

Lightly oil the grill grates to prevent sticking.

Step 7

Place the branzino on the grill and cook for 6-8 minutes on each side, or until the skin is crispy and the fish is opaque and flakes easily with a fork.

Step 8

Carefully remove the fish from the grill and let it rest for a few minutes.

Step 9

Garnish with chopped fresh parsley and serve with additional lemon wedges on the side.
