Ingredients

  • 2 medium aubergine (eggplant)
  • 4 tablespoons olive oil

  • 2 tablespoons fresh basil
  • 1 tablespoon fresh mint
  • 2 cloves garlic
  • 2 tablespoons lemon juice
  • 0.25 teaspoon red chili flakes

Directions

Step 1

Preheat your grill or grill pan to medium-high heat.

Slice the aubergine into 1/2-inch thick rounds and brush both sides with 2 tablespoons of olive oil. Sprinkle with salt and pepper.
