Ingredients

  • 2 large fresh artichokes
  • 1 lemon
  • 0.25 cup olive oil
  • 2 garlic cloves

  • 2 tablespoons fresh parsley
  • 0.25 cup Parmesan cheese (optional)
  • 4 cups water

Directions

Step 1

Start by trimming the artichoke stems to 1 inch and peeling off the tough outer leaves.

Slice the top inch off each artichoke, and use kitchen shears to snip off the thorny leaf tips.

Cut the artichokes in half lengthwise and scoop out the fuzzy choke with a spoon.

Fill a large pot with 4 cups of water and squeeze the juice of a lemon into it, adding the lemon halves as well.
