Ingredients

  • 1 cup Almonds
  • 1 cup Pecans
  • 0.5 cup Sunflower seeds
  • 0.5 cup Pumpkin seeds
  • 0.5 cup Unsweetened shredded coconut
  • 2 tablespoons Chia seeds
  • 2 tablespoons Flaxseed meal
  • 0.25 cup Coconut oil
  • 0.5 cup Almond butter
  • 0.25 cup Erythritol (or preferred keto sweetener)
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.

Step 2

In a food processor, combine the almonds, pecans, sunflower seeds, and pumpkin seeds. Pulse several times until the mixture is roughly chopped but not too fine.

In a large mixing bowl, combine the chopped nut and seed mixture with the unsweetened shredded coconut, chia seeds, and flaxseed meal. Stir until evenly mixed.
