Ingredients

  • 1 cup Raw almonds
  • 1 cup Raw walnuts
  • 1 cup Raw pecans
  • 1 cup Unsweetened shredded coconut
  • 0.5 cup Pumpkin seeds
  • 0.5 cup Sunflower seeds
  • 2 tablespoons Chia seeds
  • 2 tablespoons Flaxseeds
  • 0.25 cup Coconut oil
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 3 tablespoons Powdered erythritol
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.

Step 2

In a food processor, pulse the almonds, walnuts, and pecans until they are roughly chopped into small chunks, but not powdered.

Step 3

In a large mixing bowl, combine the chopped nuts with shredded coconut, pumpkin seeds, sunflower seeds, chia seeds, and flaxseeds.

Step 4

In a small saucepan over low heat, melt the coconut oil. Once melted, remove from the heat and stir in the vanilla extract, ground cinnamon, powdered erythritol, and salt.

Step 5

Pour the coconut oil mixture over the nut and seed mixture and stir until everything is well coated.
