Ingredients

  • 2 medium Turnips
  • 1 cup Cauliflower florets
  • 1 cup Almond flour
  • 2 large Eggs
  • 0.5 cup Parmesan cheese, grated
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 teaspoon Baking powder
  • 3 tablespoons Coconut oil

Directions

Step 1

Peel and grate the turnips using a box grater and place them in a clean kitchen towel. Squeeze out as much moisture as possible.

Step 2

Steam the cauliflower florets in a microwave for about 4 minutes or until tender. Allow them to cool, then finely chop.

Step 3

In a large mixing bowl, combine the grated turnips, chopped cauliflower, almond flour, Parmesan cheese, garlic powder, onion powder, salt, black pepper, and baking powder.

Step 4

In a separate small bowl, beat the eggs and add them to the turnip mixture. Stir until well combined and the mixture comes together.

Step 5

Divide the mixture into small portions and shape them into patties, about 2.5 inches in diameter and 0.5 inches thick.

Step 6

Heat the coconut oil in a large non-stick skillet over medium heat.

Step 7

Fry the fritters in batches, cooking for about 3-4 minutes on each side or until golden brown and crispy. Be careful not to overcrowd the pan.

Step 8

Once cooked, place the fritters on a plate lined with paper towels to absorb any excess oil.

Step 9

Serve warm, garnished with fresh herbs if desired.
