Ingredients

  • 1 cup Almond flour
  • 1 tablespoon Psyllium husk
  • 0.5 teaspoon Xanthan gum
  • 0.25 teaspoon Salt
  • 0.5 cup Warm water
  • 1 tablespoon Olive oil
  • 0.5 cup Boiled chickpeas (optional for non-strict keto)
  • 0.25 cup Stevia-sweetened tamarind paste
  • 1 teaspoon Chaat masala
  • 0.5 teaspoon Cumin powder
  • 10 leaves Mint leaves
  • 2 tablespoons Coriander leaves
  • 1 small Green chili
  • 2 tablespoons Lemon juice
  • 2 cups Water

Directions

Step 1

In a mixing bowl, combine the almond flour, psyllium husk, xanthan gum, and salt.

Step 2

Slowly add warm water to the flour mixture while stirring, forming a dough.

Step 3

Knead the dough until smooth and elastic, then let it rest for 10 minutes.

Step 4

Divide the dough into small, equal-sized balls and roll them out into thin rounds.

Step 5

Heat olive oil in a pan over medium heat. Fry each round until crisp and golden on both sides. Set aside to cool.

For the filling, if using chickpeas, mix them with chaat masala and cumin powder.

Blend mint leaves, coriander leaves, green chili, lemon juice, and 2 cups of water to prepare the mint water. Strain the mixture.

Once the rounds (puries) have cooled, gently make a small hole in the center of each.

Fill each puri with 2-3 pieces of the chickpea mixture (if using) and a little stevia-sweetened tamarind paste.
